  • 4 cups arugula
  • 200 g halloumi cheese sliced
  • 6 fresh figs quartered
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions 

  1. Heat a non-stick pan over medium heat.
  2. Add the halloumi slices and cook until golden brown on both sides, about 2-3 minutes per side.
  3. In a large bowl, combine arugula and figs.
  4. Add the cooked halloumi.
  5. Drizzle with olive oil and balsamic vinegar.
  6. Season with salt and pepper.
  7. Toss gently to combine and serve immediately.
