Baby Octopus Stewed in Wine/Tomato

Main Ingredients
- 1 kg Baby Octopus cleaned
- 2 tablespoon Olive Oil
- 1 Onion chopped
- 2 cloves Garlic minced
- 400 g Canned Tomatoes chopped
- 1 cup Red Wine
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Basil
- 1. Heat the olive oil in a large pot over medium heat. 
- 2. Add the chopped onion and minced garlic, and sauté until the onion is translucent. 
- 3. Add the baby octopus and cook for about 5 minutes, stirring occasionally. 
- 4. Pour in the red wine and bring to a simmer. Cook for 10 minutes to reduce the wine slightly. 
- 5. Add the chopped tomatoes, salt, black pepper, oregano, and basil. Stir well to combine. 
- 6. Reduce the heat to low, cover the pot, and let it simmer for about 45 minutes, or until the octopus is tender. 
- 7. Taste and adjust the seasoning if necessary. Serve hot.
