Baby Octopus Stewed in Wine/Tomato

- 1 kg Baby Octopus cleaned
- 2 tablespoon Olive Oil
- 1 Onion chopped
- 2 cloves Garlic minced
- 400 g Canned Tomatoes chopped
- 1 cup Red Wine
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Basil
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
3. Add the baby octopus and cook for about 5 minutes, stirring occasionally.
4. Pour in the red wine and bring to a simmer. Cook for 10 minutes to reduce the wine slightly.
5. Add the chopped tomatoes, salt, black pepper, oregano, and basil. Stir well to combine.
6. Reduce the heat to low, cover the pot, and let it simmer for about 45 minutes, or until the octopus is tender.
7. Taste and adjust the seasoning if necessary. Serve hot.
