- 4 cups potatoes, diced
- 3 tablespoon olive oil
- 4 cloves garlic, minced
- 1 teaspoon red chili flakes
- 1 teaspoon ground coriander
- 1 cup fresh cilantro, chopped

1. Heat the olive oil in a frying pan over medium heat.
2. Add the diced potatoes and cook until golden and crispy, about 15-20 minutes.
3. Add the minced garlic, red chili flakes, and ground coriander. Cook for another 2-3 minutes.
4. Stir in the chopped cilantro and salt to taste. Cook for another minute.
5. Serve hot as a side dish.
