Ingredients 

Main Ingredients

  • 2 medium beets roasted
  • 1 can chickpeas drained and rinsed
  • 2 cloves garlic minced
  • 3 tablespoon tahini
  • 2 tablespoon lemon juice freshly squeezed
  • 2 tablespoon olive oil
  • 1 teaspoon cumin ground
  • to taste salt
  • to taste black pepper

Instructions 

  1. Preheat the oven to 400°F (200°C). Wrap the beets in foil and roast for 45 minutes or until tender. Let them cool, then peel and chop.
  2. In a blender, combine the roasted beets, chickpeas, garlic, tahini, lemon juice, olive oil, and cumin. Blend until smooth.
  3. Season with salt and black pepper to taste. Blend again to combine.
  4. Transfer to a serving bowl and drizzle with a bit of olive oil if desired. Serve with pita bread or fresh veggies.
