  • ¼ cup tahini
  • ¼ cup lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2-4 tablespoons water as needed

Instructions 

  1. 1. In a food processor, combine black-eyed peas, tahini, lemon juice, garlic, olive oil, cumin, salt, and black pepper.
  2. 2. Process until smooth, adding water as needed to reach desired consistency.
  3. 3. Taste and adjust seasoning if necessary.
  4. 4. Serve with pita bread, veggies, or as a spread.
