Ingredients

  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • ¼ cup Red onion, finely chopped
  • ¼ cup Fresh parsley, chopped

Dressing

  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic, minced
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper

Instructions 

  1. 1. In a large mixing bowl, combine the black-eyed peas, cherry tomatoes, cucumber, red onion, and parsley.
