Main Ingredients
- 2 cups Black-eyed peas, cooked
- 1 cup Cherry tomatoes, halved
- 1 cup Cucumber, diced
- ¼ cup Red onion, finely chopped
- ¼ cup Fresh parsley, chopped
Dressing
- 3 tablespoons Olive oil
- 2 tablespoons Lemon juice
- 1 teaspoon Dijon mustard
- 1 clove Garlic, minced
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
1. In a large mixing bowl, combine the black-eyed peas, cherry tomatoes, cucumber, red onion, and parsley.
2. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper.
3. Pour the dressing over the salad and toss to combine.
4. Serve immediately or refrigerate for later.
