Black Eyed Pea Salad (Mediterranean Style)

Main Ingredients
- 2 cups Black-eyed peas, cooked
- 1 cup Cherry tomatoes, halved
- 1 cup Cucumber, diced
- ¼ cup Red onion, finely chopped
- ¼ cup Fresh parsley, chopped
Dressing
- 3 tablespoons Olive oil
- 2 tablespoons Lemon juice
- 1 teaspoon Dijon mustard
- 1 clove Garlic, minced
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
- 1. In a large mixing bowl, combine the black-eyed peas, cherry tomatoes, cucumber, red onion, and parsley. 
- 2. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper. 
- 3. Pour the dressing over the salad and toss to combine. 
- 4. Serve immediately or refrigerate for later.
