Braised Artichokes w/ Peas & Dill (Aginares me Araka)
A classic Greek dish featuring tender artichokes and peas, flavored with fresh dill.

Main Ingredients
- 8 pieces Artichokes trimmed and cleaned
- 2 cups Peas fresh or frozen
- 1 cup Dill chopped
- 1 cup Olive oil
- 1 cup Onion chopped
- 2 cloves Garlic minced
- 2 cups Vegetable broth
- 1 teaspoon Salt to taste
- 1 teaspoon Black pepper to taste
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and garlic, and sauté until soft.
3. Add the artichokes, peas, dill, vegetable broth, salt, and pepper.
4. Bring to a boil, then reduce heat to low and simmer for 45 minutes, until artichokes are tender.
5. Serve warm, garnished with additional dill if desired.
