Ingredients 

Main Ingredients

  • 8 pieces Artichokes trimmed and cleaned
  • 2 cups Peas fresh or frozen
  • 1 cup Dill chopped
  • 1 cup Olive oil
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 2 cups Vegetable broth
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion and garlic, and sauté until soft.
  3. 3. Add the artichokes, peas, dill, vegetable broth, salt, and pepper.
  4. 4. Bring to a boil, then reduce heat to low and simmer for 45 minutes, until artichokes are tender.
  5. 5. Serve warm, garnished with additional dill if desired.
