Calamari Salad (Cooked Calamari)

Main Ingredients
- 500 g Calamari, cleaned and cut into rings
- 1 cup Cherry tomatoes, halved
- 1 cup Cucumber, diced
- ¼ cup Red onion, thinly sliced
- ¼ cup Olive oil
- 2 tablespoon Lemon juice
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- ¼ cup Fresh parsley, chopped
1. Bring a pot of water to a boil. Add the calamari and cook for 2-3 minutes until tender. Drain and set aside to cool.
2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, and cooled calamari.
3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
4. Pour the dressing over the salad and toss to combine.
5. Garnish with fresh parsley and serve immediately.
