Ingredients 

Main Ingredients

  • 2 cups Chickpeas cooked
  • 1 cup Carrots peeled and chopped
  • 1 tablespoon Ginger grated
  • ¼ cup Tahini
  • 2 tablespoon Olive Oil
  • 1 clove Garlic minced
  • 1 teaspoon Salt
  • ½ teaspoon Cumin
  • ¼ cup Lemon Juice freshly squeezed
  • ¼ cup Water as needed

Instructions 

  1. 1. Cook the carrots in boiling water until tender, about 10 minutes. Drain and let cool.
  2. 2. In a food processor, combine the chickpeas, cooked carrots, ginger, tahini, olive oil, garlic, salt, cumin, and lemon juice. Process until smooth.
  3. 3. Add water as needed to achieve the desired consistency. Adjust seasoning to taste.
  4. 4. Serve with pita bread, crackers, or fresh vegetables.
