Instructions
Heat the olive oil in a pan over medium heat.
Add the grated carrots and sauté until they are soft, about 5-7 minutes.
Remove from heat and let the carrots cool.
In a mixing bowl, combine the cooled carrots, Greek yogurt, minced garlic, salt, and black pepper.
Mix well until all ingredients are thoroughly combined.
Transfer to a serving dish and refrigerate for at least 30 minutes before serving.
