Ingredients 

Main Ingredients

  • 1 medium cauliflower grated
  • 1 cup cherry tomatoes halved
  • ½ cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh parsley chopped
  • ¼ cup fresh mint chopped
  • ¼ cup lemon juice
  • 2 tablespoon olive oil
  • Salt and pepper to taste

Instructions 

  1. Grate the cauliflower into rice-sized pieces.
  2. In a large bowl, combine cauliflower, tomatoes, cucumber, red onion, parsley, and mint.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  4. Pour the dressing over the cauliflower mixture and toss to combine.
  5. Serve immediately or chill in the fridge for an hour for flavors to meld.
