Ingredients

  • 4 large Tomatoes halved
  • 1 medium Onion quartered
  • 2 cloves Garlic peeled
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper freshly ground
  • 1 tablespoon Lime Juice freshly squeezed
  • 1 cup Cilantro chopped

Instructions 

  1. Preheat your oven to 450°F (230°C).
  2. Place the halved tomatoes, quartered onion, and garlic cloves on a baking sheet. Drizzle with olive oil and sprinkle with salt and black pepper.
  3. Roast in the preheated oven for about 15 minutes, or until the tomatoes are charred and the onions are soft.
  4. Remove from the oven and let cool slightly.
  5. Transfer the roasted vegetables to a blender. Add lime juice and cilantro. Blend until smooth.
  6. Adjust seasoning with more salt and pepper if needed. Serve as a salsa or use as a vinaigrette for salads.
