Main Ingredients
- 2 cups chickpeas, cooked or canned drained and rinsed
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- ¼ cup red onion finely chopped
- ¼ cup parsley chopped
- ¼ cup mint chopped
Dressing
- ¼ cup olive oil
- 1 unit lemon, juiced
- 1 teaspoon ground cumin
- ½ teaspoon salt
- ¼ teaspoon black pepper
In a large mixing bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, parsley, and mint.
In a small bowl, whisk together olive oil, lemon juice, ground cumin, salt, and black pepper.
Pour the dressing over the chickpea mixture and toss to combine.
Serve immediately or refrigerate for later. Enjoy!
