Ingredients 

Main Ingredients

  • 1 cup Couscous
  • 1 cup Boiling Water
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • ½ cup Red Onion finely chopped
  • ¼ cup Olive Oil
  • 2 tablespoon Lemon Juice freshly squeezed
  • ¼ cup Fresh Parsley chopped
  • ¼ cup Feta Cheese crumbled
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. In a large mixing bowl, add the couscous and boiling water. Cover and let it sit for 5 minutes.
  2. 2. Fluff the couscous with a fork and let it cool.
  3. 3. Add the cherry tomatoes, cucumber, red onion, olive oil, lemon juice, parsley, and feta cheese to the couscous.
  4. 4. Season with salt and black pepper to taste. Toss everything together until well combined.
  5. 5. Serve immediately or chill in the fridge for later.
