Falafel Sliders

Falafel Mixture
- 1 cup Chickpeas canned, drained and rinsed
- ¼ cup Onion chopped
- 2 cloves Garlic minced
- ¼ cup Fresh Parsley chopped
- 1 teaspoon Cumin
- 1 teaspoon Coriander
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
- ¼ teaspoon Baking Powder
- 2 tablespoon Flour
- 2 tablespoon Olive Oil for frying
Sliders
- 8 pieces Small Bread Rolls slider buns
- 1 cup Lettuce shredded
- 1 cup Tomato sliced
- ½ cup Tzatziki Sauce
1. In a food processor, combine chickpeas, onion, garlic, parsley, cumin, coriander, salt, pepper, and baking powder. Pulse until mixture is coarse and combined.
2. Add flour and pulse a few more times until mixture holds together. Form into small patties.
3. Heat olive oil in a frying pan over medium heat. Fry patties for 3-4 minutes on each side until golden brown.
4. Assemble sliders by placing a falafel patty on each bun, then top with lettuce, tomato, and tzatziki sauce.
