Ingredients 

Main Ingredients

  • 1 cup yellow split peas
  • 4 cups water
  • 1 onion, chopped
  • ¼ cup olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoon lemon juice

Instructions 

  1. Rinse the yellow split peas under cold water.
  2. In a pot, combine the split peas, water, and chopped onion. Bring to a boil.
  3. Reduce heat and simmer for about 40 minutes, until peas are soft.
  4. Drain any excess water and transfer the mixture to a blender.
  5. Add olive oil, salt, pepper, and lemon juice. Blend until smooth.
  6. Serve warm or at room temperature, drizzled with extra olive oil if desired.
