Ingredients 

Main Ingredients

  • 1 cup freekeh
  • 2 cups water
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • 1 red onion, chopped
  • 2 tablespoon olive oil
  • Salt and pepper to taste
  • ¼ cup chopped fresh parsley
  • ¼ cup crumbled feta cheese
  • 2 tablespoon lemon juice

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Cook freekeh according to package instructions.
  3. Toss bell peppers, zucchini, and red onion with olive oil, salt, and pepper. Roast for 20-25 minutes.
  4. In a large bowl, combine cooked freekeh, roasted vegetables, parsley, feta, and lemon juice. Mix well.
