Instructions
Preheat oven to 400°F (200°C).
Cook freekeh according to package instructions.
Toss bell peppers, zucchini, and red onion with olive oil, salt, and pepper. Roast for 20-25 minutes.
In a large bowl, combine cooked freekeh, roasted vegetables, parsley, feta, and lemon juice. Mix well.
