- 1 large Eggplant sliced into rounds
- 1 cup All-purpose flour
- 2 units Eggs beaten
- 1 cup Breadcrumbs
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 cup Vegetable Oil for frying
1. Slice the eggplant into ¼ inch rounds.
2. Season the eggplant slices with salt and pepper.
3. Dredge each slice in flour, then dip in beaten eggs, and coat with breadcrumbs.
4. Heat the vegetable oil in a frying pan over medium heat.
5. Fry the eggplant slices until golden brown, about 2-3 minutes per side.
6. Drain on paper towels and serve warm.
