  • 500 g Smelt cleaned
  • 1 cup All-purpose flour
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 cup Vegetable oil for frying
  • 1 lemon Lemon cut into wedges

Instructions 

  1. 1. Rinse the smelt under cold water and pat dry with paper towels.
  2. 2. In a shallow dish, combine the flour, salt, and black pepper.
  3. 3. Dredge the smelt in the flour mixture, shaking off any excess.
  4. 4. Heat the vegetable oil in a frying pan over medium-high heat.
  5. 5. Fry the smelt in batches until golden brown and crispy, about 2-3 minutes per side.
  6. 6. Remove the smelt from the pan and drain on paper towels.
  7. 7. Serve hot with lemon wedges on the side.
