  • 2 medium zucchini sliced into rounds or sticks
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • to taste salt and pepper
  • as needed vegetable oil for frying

Instructions 

  1. 1. Slice the zucchini into rounds or sticks.
  2. 2. In a bowl, mix the flour with a pinch of salt and pepper.
  3. 3. Beat the eggs in another bowl.
  4. 4. In a third bowl, combine the breadcrumbs and grated Parmesan cheese.
  5. 5. Dredge the zucchini slices/sticks in the flour, then dip in the beaten eggs, and finally coat with the breadcrumb mixture.
  6. 6. Heat the vegetable oil in a frying pan over medium heat.
  7. 7. Fry the zucchini slices/sticks until golden brown, about 2-3 minutes per side.
  8. 8. Remove from the pan and drain on paper towels. Serve hot.
