Main Ingredients
- 2 medium zucchini sliced into rounds or sticks
- 1 cup all-purpose flour
- 2 large eggs beaten
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- to taste salt and pepper
- as needed vegetable oil for frying
1. Slice the zucchini into rounds or sticks.
2. In a bowl, mix the flour with a pinch of salt and pepper.
3. Beat the eggs in another bowl.
4. In a third bowl, combine the breadcrumbs and grated Parmesan cheese.
5. Dredge the zucchini slices/sticks in the flour, then dip in the beaten eggs, and finally coat with the breadcrumb mixture.
6. Heat the vegetable oil in a frying pan over medium heat.
7. Fry the zucchini slices/sticks until golden brown, about 2-3 minutes per side.
8. Remove from the pan and drain on paper towels. Serve hot.
