Main Ingredients
- 500 g Giant Beans soaked overnight
- 1 large Onion finely chopped
- 2 cloves Garlic minced
- 400 g Tomatoes chopped
- 60 ml Olive Oil
- 1 tablespoon Tomato Paste
- 1 teaspoon Sugar
- 1 teaspoon Dried Oregano
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 1 cup Water
- 1 handful Fresh Parsley chopped
Preheat your oven to 180°C (350°F).
Drain and rinse the soaked beans. Place them in a large pot, cover with water, and bring to a boil. Simmer for about 45 minutes until tender.
In a large pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
Add the chopped tomatoes, tomato paste, sugar, oregano, salt, and pepper. Cook for about 10 minutes until the sauce thickens.
Combine the cooked beans and tomato sauce in a baking dish. Add a cup of water and mix well.
Bake in the preheated oven for about 45 minutes until the beans are tender and the sauce is thickened. Stir occasionally and add more water if needed.
Garnish with chopped fresh parsley before serving.
