Gözleme (Turkish Griddled Flatbread - small wedges)
Gözleme is a traditional Turkish flatbread filled with various ingredients and cooked on a griddle.

Dough
- 2 cups All-purpose flour
- 1 teaspoon Salt
- ¾ cup Water Warm
Filling
- 1 cup Feta cheese crumbled
- 1 cup Spinach chopped
- 1 tablespoon Olive oil
In a mixing bowl, combine flour and salt. Gradually add warm water and mix until a dough forms. Knead for 5-7 minutes until smooth.
Divide the dough into 4 equal pieces. Roll each piece into a thin circle using a rolling pin.
Place a portion of feta cheese and spinach on one half of each dough circle. Fold the other half over and press the edges to seal.
Heat a griddle over medium heat. Brush each Gözleme with olive oil and cook for 3-4 minutes on each side until golden brown.
Cut into small wedges and serve warm.
