Main Ingredients
- 2 large eggplants sliced lengthwise
- 1 cup ricotta cheese
- ½ cup grated Parmesan cheese
- 1 cup marinara sauce
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon fresh basil chopped
Preheat grill to medium-high heat.
Brush eggplant slices with olive oil and season with salt and pepper.
Grill eggplant slices for 3-4 minutes on each side until tender.
In a mixing bowl, combine ricotta, Parmesan, and basil.
Place a spoonful of the cheese mixture on each eggplant slice and roll up.
Place rolls in a baking dish, top with marinara sauce, and bake at 375°F (190°C) for 20 minutes.
