Ingredients 

Main Ingredients

  • 2 large eggplants sliced lengthwise
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh basil chopped

Instructions 

  1. Preheat grill to medium-high heat.
  2. Brush eggplant slices with olive oil and season with salt and pepper.
  3. Grill eggplant slices for 3-4 minutes on each side until tender.
  4. In a mixing bowl, combine ricotta, Parmesan, and basil.
  5. Place a spoonful of the cheese mixture on each eggplant slice and roll up.
  6. Place rolls in a baking dish, top with marinara sauce, and bake at 375°F (190°C) for 20 minutes.
