Ingredients

  • 2 large Eggplants sliced into ¼ inch rounds
  • 2 tablespoon Olive oil
  • 2 tablespoon Balsamic vinegar
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. Brush the eggplant slices with olive oil on both sides.
  3. 3. Grill the eggplant slices for about 5-7 minutes on each side, until tender and grill marks appear.
  4. 4. Remove from the grill and drizzle with balsamic vinegar.
  5. 5. Sprinkle with dried oregano, dried basil, salt, and black pepper. Serve warm.
