Grilled Eggplant Slices with Balsamic/Herbs

Main Ingredients
- 2 large Eggplants sliced into ¼ inch rounds
- 2 tablespoon Olive oil
- 2 tablespoon Balsamic vinegar
- 1 teaspoon Dried oregano
- 1 teaspoon Dried basil
- 1 teaspoon Salt to taste
- 1 teaspoon Black pepper to taste
- 1. Preheat your grill to medium-high heat. 
- 2. Brush the eggplant slices with olive oil on both sides. 
- 3. Grill the eggplant slices for about 5-7 minutes on each side, until tender and grill marks appear. 
- 4. Remove from the grill and drizzle with balsamic vinegar. 
- 5. Sprinkle with dried oregano, dried basil, salt, and black pepper. Serve warm.
