Main Ingredients
- 2 medium zucchini sliced into ¼ inch rounds
- 2 tablespoons olive oil
- 2 cloves garlic minced
- ¼ cup fresh mint leaves chopped
- to taste salt
- to taste black pepper
- Preheat your grill to medium-high heat. 
- In a mixing bowl, combine olive oil, minced garlic, chopped mint, salt, and black pepper. 
- Add the zucchini slices to the bowl and toss to coat them evenly with the mixture. 
- Place the zucchini slices on the grill. Cook for about 4-5 minutes on each side, or until they are tender and have grill marks. 
- Remove from the grill and serve immediately.
