- 2 medium zucchini sliced into ¼ inch rounds
- 2 tablespoons olive oil
- 2 cloves garlic minced
- ¼ cup fresh mint leaves chopped

Preheat your grill to medium-high heat.
In a mixing bowl, combine olive oil, minced garlic, chopped mint, salt, and black pepper.
Add the zucchini slices to the bowl and toss to coat them evenly with the mixture.
Place the zucchini slices on the grill. Cook for about 4-5 minutes on each side, or until they are tender and have grill marks.
Remove from the grill and serve immediately.
