Halloumi Salad with Watermelon & Mint

- 200 g halloumi cheese sliced
- 500 g watermelon cubed
- 1 cup fresh mint leaves chopped
- 2 tablespoon olive oil
- 1 tablespoon balsamic glaze
1. Heat a grill pan over medium heat. Grill the halloumi slices for about 2-3 minutes on each side until golden brown.
2. In a large mixing bowl, combine the watermelon cubes and chopped mint leaves.
3. Add the grilled halloumi to the bowl and gently toss to combine.
4. Drizzle with olive oil and balsamic glaze. Serve immediately.
