Ingredients

  • 2 cups roasted red peppers
  • 1 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • 1 teaspoon red wine vinegar
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions 

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Roast the red peppers until they are charred and soft, about 20 minutes.
  3. 3. Let the peppers cool, then peel off the skins and remove the seeds.
  4. 4. In a blender, combine the roasted peppers, feta cheese, olive oil, garlic, red wine vinegar, and oregano. Blend until smooth.
  5. 5. Season with salt and pepper to taste.
  6. 6. Serve with pita bread or fresh vegetables.
