Jibneh Manakish (Cheese Flatbread)

Dough
- 2 cups All-purpose flour
- 1 teaspoon Salt
- 1 teaspoon Sugar
- 1 tablespoon Olive oil
- 1 cup Warm water
- 1 tablespoon Active dry yeast
Topping
- 1 cup Shredded cheese (Akkawi or Mozzarella)
- 1. Preheat your oven to 400°F (200°C). 
- 2. In a mixing bowl, combine flour, salt, and sugar. 
- 3. Add olive oil, warm water, and yeast. Mix until a dough forms. 
- 4. Knead the dough for about 5-7 minutes until smooth. 
- 5. Cover the dough and let it rise for 1 hour. 
- 6. Divide the dough into 4 portions and roll each into a flat circle. 
- 7. Place the dough circles on a baking sheet and top with shredded cheese. 
- 8. Bake for 10-15 minutes until the cheese is melted and the crust is golden.
