Ingredients 

Kibbeh Dough

  • 2 cups fine bulgur wheat
  • 1 lb ground beef or lamb
  • 1 large onion, finely chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon allspice

Filling

  • 1 lb ground beef or lamb
  • 1 large onion, finely chopped
  • ½ cup pine nuts toasted
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon allspice

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Soak the bulgur wheat in water for 30 minutes, then drain well.
  3. In a large mixing bowl, combine the soaked bulgur, ground meat, chopped onion, salt, pepper, and allspice. Mix well until a dough forms.
  4. For the filling, sauté the chopped onion in a bit of oil until soft. Add the ground meat, salt, pepper, and allspice. Cook until the meat is browned. Stir in the toasted pine nuts.
  5. Grease a baking dish with some oil. Spread half of the kibbeh dough evenly on the bottom of the dish.
  6. Spread the filling mixture evenly over the dough layer.
  7. Cover with the remaining kibbeh dough, pressing down gently. Score the top into squares or diamond shapes.
  8. Bake in the preheated oven for 45 minutes, or until the top is browned and the kibbeh is cooked through.
  9. Let it cool slightly before cutting into squares and serving.
