Ingredients 

Main Ingredients

  • 1 cup fine bulgur
  • 1 cup hot water
  • 1 medium onion, finely chopped
  • 2 tablespoon tomato paste
  • 1 tablespoon pepper paste
  • 1 bunch parsley, chopped
  • 1 bunch mint, chopped
  • 2 tablespoon olive oil
  • 1 lemon juice of
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions 

  1. 1. Place the bulgur in a large mixing bowl and pour the hot water over it. Cover and let it sit for about 10 minutes until the bulgur absorbs the water and becomes soft.
  2. 2. In a saucepan, heat the olive oil over medium heat. Add the chopped onion and cook until soft and translucent.
  3. 3. Add the tomato paste and pepper paste to the onions and cook for another 2-3 minutes.
  4. 4. Add the cooked onion mixture to the bulgur and mix well.
  5. 5. Add the chopped parsley, mint, lemon juice, salt, and black pepper. Mix everything together until well combined.
  6. 6. Let the salad sit for at least 30 minutes to allow the flavors to meld. Serve at room temperature or chilled.
