Main Ingredients
- 4 cups grated zucchini
- 1 cup crumbled feta cheese
- 2 tablespoons chopped dill
- 2 tablespoons chopped mint
- 2 tablespoons olive oil
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 3 eggs beaten
- to taste salt and pepper
Preheat oven to 350°F (175°C).
Grate the zucchini and squeeze out excess moisture.
In a large bowl, mix zucchini, feta, dill, mint, olive oil, flour, baking powder, and beaten eggs. Season with salt and pepper.
Pour the mixture into a greased baking dish.
Bake for 45 minutes or until golden brown.
Let it cool slightly before cutting into small triangles or squares. Serve warm or at room temperature.
