Ingredients

  • 4 cups grated zucchini
  • 1 cup crumbled feta cheese
  • 2 tablespoons chopped dill
  • 2 tablespoons chopped mint
  • 2 tablespoons olive oil
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 3 eggs beaten
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Grate the zucchini and squeeze out excess moisture.
  3. In a large bowl, mix zucchini, feta, dill, mint, olive oil, flour, baking powder, and beaten eggs. Season with salt and pepper.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 45 minutes or until golden brown.
  6. Let it cool slightly before cutting into small triangles or squares. Serve warm or at room temperature.
