Instructions
1. Rinse the lentils under cold water.
2. In a pot, combine lentils and water. Bring to a boil, then reduce heat and simmer for 20 minutes or until lentils are tender.
3. Drain any excess water from the lentils.
4. In a blender, combine cooked lentils, olive oil, smoked paprika, cumin, garlic, and diced tomatoes. Blend until smooth.
5. Season with salt and pepper to taste.
6. Serve warm or chilled as a dip or spread.
