Ingredients 

Main Ingredients

  • 1 cup Brown or Green Lentils rinsed
  • 2 cups Water
  • 1 Red Bell Pepper diced
  • 1 Cucumber diced
  • ¼ cup Red Onion finely chopped
  • ¼ cup Fresh Parsley chopped
  • ¼ cup Olive Oil
  • 2 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. 1. Rinse the lentils under cold water.
  2. 2. In a pot, combine lentils and water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain and set aside.
  3. 3. In a large mixing bowl, combine cooked lentils, red bell pepper, cucumber, red onion, and parsley.
  4. 4. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  5. 5. Pour the dressing over the salad and toss to combine. Serve warm or at room temperature.
