Mussels Saganaki (Mussels with Tomato & Feta)

Main Ingredients
- 2 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (400g)
- 1 cup white wine
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 lbs mussels, cleaned and debearded
- ½ cup feta cheese, crumbled
- ¼ cup fresh parsley, chopped
Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic and cook for another minute.
Pour in the diced tomatoes and white wine. Stir in the oregano, salt, and black pepper. Bring to a simmer.
Add the mussels to the skillet. Cover and cook until the mussels open, about 5-7 minutes. Discard any mussels that do not open.
Sprinkle the crumbled feta cheese and chopped parsley over the mussels. Serve immediately.
