Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (400g)
  • 1 cup white wine
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 lbs mussels, cleaned and debearded
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh parsley, chopped

Instructions 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Pour in the diced tomatoes and white wine. Stir in the oregano, salt, and black pepper. Bring to a simmer.
  5. Add the mussels to the skillet. Cover and cook until the mussels open, about 5-7 minutes. Discard any mussels that do not open.
  6. Sprinkle the crumbled feta cheese and chopped parsley over the mussels. Serve immediately.
