Ingredients

  • 2 medium beetroots roasted
  • 2 tablespoon tahini
  • 1 clove garlic minced
  • 1 tablespoon lemon juice fresh
  • 2 tablespoon olive oil
  • to taste salt
  • to taste pepper

Instructions 

  1. Preheat your oven to 200°C (400°F).
  2. Wrap the beetroots in aluminum foil and roast for 40 minutes or until tender.
  3. Let the beetroots cool, then peel and chop them.
  4. In a blender, combine the roasted beetroots, tahini, garlic, lemon juice, and olive oil. Blend until smooth.
  5. Season with salt and pepper to taste. Serve chilled or at room temperature.
