Ingredients

  • 1 kg Octopus cleaned
  • 2 tablespoon Olive oil
  • 1 tablespoon Red wine vinegar
  • 1 clove Garlic minced
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper freshly ground
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • 1 cup Red onion thinly sliced
  • 1 tablespoon Fresh parsley chopped

Instructions 

  1. 1. Bring a large pot of salted water to a boil. Add the octopus and cook for about 40 minutes, or until tender. Remove from water and let cool.
  2. 2. Once the octopus is cool, cut it into bite-sized pieces.
  3. 3. In a large mixing bowl, combine the olive oil, red wine vinegar, minced garlic, lemon juice, salt, and black pepper. Mix well.
  4. 4. Add the octopus pieces, cherry tomatoes, cucumber, red onion, and fresh parsley to the bowl. Toss everything together until well coated.
  5. 5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled.
