Orzo Salad with Feta & Spinach

Main Ingredients
- 1 cup orzo
- 2 cups fresh spinach chopped
- 1 cup feta cheese crumbled
- ¼ cup olive oil
- 2 tablespoon lemon juice freshly squeezed
- 1 teaspoon dried oregano
- 1 clove garlic minced
- to taste salt
- to taste black pepper freshly ground
1. Cook the orzo according to package instructions. Drain and set aside to cool.
2. In a large mixing bowl, combine the cooked orzo, chopped spinach, and crumbled feta.
3. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, minced garlic, salt, and black pepper.
4. Pour the dressing over the orzo mixture and toss to combine.
5. Serve immediately or refrigerate for later.
