Pistachio Kofta

Kofta Ingredients
- 500 g Ground Lamb
- 100 g Pistachios shelled
- 1 Onion finely chopped
- 2 cloves Garlic minced
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Coriander
- 1 teaspoon Salt
- 0.5 teaspoon Black Pepper
- 1 tablespoon Olive Oil
- 1. Preheat your grill or oven to 200°C (400°F). 
- 2. In a food processor, pulse the pistachios until they are finely ground. 
- 3. In a mixing bowl, combine the ground lamb, ground pistachios, chopped onion, minced garlic, ground cumin, ground coriander, salt, and black pepper. Mix well. 
- 4. Form the mixture into small logs or patties and thread onto skewers if using. 
- 5. Brush the koftas with olive oil and place them on the grill or in the oven. Cook for about 15-20 minutes, turning occasionally, until they are cooked through and nicely browned. 
- 6. Serve hot with your favorite sides or dips.
