Kofta Ingredients
- 500 g Ground Lamb
- 100 g Pistachios shelled
- 1 Onion finely chopped
- 2 cloves Garlic minced
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Coriander
- 1 teaspoon Salt
- 0.5 teaspoon Black Pepper
- 1 tablespoon Olive Oil
1. Preheat your grill or oven to 200°C (400°F).
2. In a food processor, pulse the pistachios until they are finely ground.
3. In a mixing bowl, combine the ground lamb, ground pistachios, chopped onion, minced garlic, ground cumin, ground coriander, salt, and black pepper. Mix well.
4. Form the mixture into small logs or patties and thread onto skewers if using.
5. Brush the koftas with olive oil and place them on the grill or in the oven. Cook for about 15-20 minutes, turning occasionally, until they are cooked through and nicely browned.
6. Serve hot with your favorite sides or dips.
