Instructions
In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until frothy.
Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover, and let it rise for 1 hour or until doubled in size.
Preheat your oven to 475°F (245°C). Divide the dough into 8 pieces and roll each into a ball.
Roll each ball into a ¼-inch thick circle. Place on a baking sheet and sprinkle with za'atar.
Bake for 8-10 minutes or until the pitas puff up and are lightly browned.
