Ingredients

  • 2 cups cooked white beans
  • 1 medium onion, thinly sliced
  • 1 medium tomato, diced
  • 1 medium cucumber, diced
  • ¼ cup parsley, chopped
  • ¼ cup tahini
  • ¼ cup lemon juice
  • 2 tablespoon olive oil
  • 1 clove garlic, minced
  • to taste salt and pepper

Instructions 

  1. In a large mixing bowl, combine the cooked white beans, sliced onion, diced tomato, diced cucumber, and chopped parsley.
  2. In a separate bowl, whisk together the tahini, lemon juice, olive oil, minced garlic, salt, and pepper until smooth.
  3. Pour the tahini dressing over the bean mixture and toss gently to combine.
  4. Serve immediately or refrigerate for later. Enjoy!
