Ingredients

  • 4 large potatoes peeled and diced
  • 1 cup cucumber diced
  • 1 cup tomatoes diced
  • 0.5 cup red onion finely chopped
  • 0.25 cup parsley chopped
  • 0.25 cup mint chopped
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon sumac
  • 1 teaspoon salt or to taste
  • 0.5 teaspoon black pepper freshly ground

Instructions 

  1. 1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooled potatoes, cucumber, tomatoes, red onion, parsley, and mint.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, sumac, salt, and black pepper.
  4. 4. Pour the dressing over the potato mixture and toss gently to combine.
  5. 5. Serve immediately or refrigerate for an hour to let the flavors meld.
