Ingredients

  • 6 cups Potatoes, diced
  • 1 cup Greek yogurt
  • 2 tablespoon Fresh dill, chopped
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. 1. Boil the diced potatoes in a pot until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a mixing bowl, combine the Greek yogurt, fresh dill, lemon juice, salt, and black pepper.
  3. 3. Add the cooled potatoes to the yogurt mixture and gently toss to coat.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
