Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh parsley chopped
  • ¼ cup fresh mint chopped
  • ¼ cup olive oil
  • 2 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed and the quinoa is tender. Fluff with a fork and let it cool.
  2. 2. In a large mixing bowl, combine the cooled quinoa, cherry tomatoes, cucumber, red onion, parsley, and mint.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Pour over the quinoa mixture and toss to combine.
  4. 4. Serve immediately or refrigerate for later. Enjoy!
