Ingredients 

Main Ingredients

  • 1 medium butternut squash peeled and cubed
  • 1 can chickpeas drained and rinsed
  • 2 tablespoon tahini
  • 1 clove garlic minced
  • 2 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoon lemon juice freshly squeezed

Instructions 

  1. Preheat the oven to 400°F (200°C).
  2. Place the cubed butternut squash on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Roast for 25-30 minutes, or until tender.
  3. In a blender, combine the roasted butternut squash, chickpeas, tahini, garlic, remaining olive oil, ground cumin, lemon juice, and a pinch of salt. Blend until smooth.
  4. If the hummus is too thick, add a bit of water until you reach the desired consistency.
  5. Adjust seasoning to taste. Serve with pita bread or fresh veggies.
