Ingredients

  • 1 head Cauliflower cut into florets
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 2 cloves Garlic minced
  • ¼ cup Tahini
  • 2 tablespoons Lemon Juice freshly squeezed

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cauliflower florets with olive oil, salt, and pepper. Spread them out on a baking sheet.
  3. Roast in the oven for 25-30 minutes, until the cauliflower is golden and tender.
  4. Let the cauliflower cool slightly, then transfer to a blender. Add the garlic, tahini, and lemon juice. Blend until smooth.
  5. Adjust seasoning with more salt, pepper, or lemon juice if needed. Serve warm or chilled.
