Ingredients 

Main Ingredients

  • 1.5 kg Potatoes peeled and cut into wedges
  • ¼ cup Olive Oil
  • ¼ cup Lemon Juice freshly squeezed
  • 1 tablespoon Dried Oregano
  • 4 cloves Garlic minced
  • to taste Salt
  • to taste Black Pepper freshly ground

Instructions 

  1. Preheat your oven to 200°C (400°F).
  2. In a large mixing bowl, combine the olive oil, lemon juice, oregano, garlic, salt, and pepper.
  3. Add the potato wedges to the bowl and toss to coat them evenly with the mixture.
  4. Spread the potatoes in a single layer on a baking tray.
  5. Roast in the preheated oven for 45 minutes, or until the potatoes are golden brown and crispy, turning them halfway through cooking.
  6. Serve hot, garnished with extra oregano if desired.
