- 4 cups Sweet Potatoes peeled and cubed
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 1 teaspoon Garlic Powder
Preheat your oven to 425°F (220°C).
In a large mixing bowl, toss the sweet potato cubes with olive oil, salt, pepper, and garlic powder until evenly coated.
Spread the sweet potato cubes in a single layer on a baking sheet.
Roast in the preheated oven for 25 minutes, or until the sweet potatoes are tender and golden brown, stirring halfway through.
