- 500 g salt cod desalted and flaked
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 cup water cold
- 2 tablespoon olive oil
- 1 egg beaten
- 1 clove garlic minced
- to taste salt
- to taste pepper
- for frying vegetable oil
In a mixing bowl, combine flour, baking powder, and a pinch of salt.
Add cold water and whisk until smooth.
Stir in olive oil, beaten egg, minced garlic, and pepper.
Fold in the desalted and flaked salt cod.
Heat vegetable oil in a frying pan over medium heat.
Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
Remove with a slotted spoon and drain on paper towels.
Serve hot with lemon wedges.
