Salt Cod Fritters (Bakaliaros)
Traditional Greek salt cod fritters, crispy on the outside and tender inside.

Main Ingredients
- 500 g salt cod desalted and flaked
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 cup water cold
- 2 tablespoon olive oil
- 1 egg beaten
- 1 clove garlic minced
- to taste salt
- to taste pepper
- for frying vegetable oil
- In a mixing bowl, combine flour, baking powder, and a pinch of salt. 
- Add cold water and whisk until smooth. 
- Stir in olive oil, beaten egg, minced garlic, and pepper. 
- Fold in the desalted and flaked salt cod. 
- Heat vegetable oil in a frying pan over medium heat. 
- Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes per side. 
- Remove with a slotted spoon and drain on paper towels. 
- Serve hot with lemon wedges.
