Shrimp Saganaki (Greek Shrimp with Tomato & Feta)

Main Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes 14.5 oz can
- 1 teaspoon dried oregano
- ½ teaspoon red pepper flakes
- ½ cup feta cheese, crumbled
- 2 tablespoon fresh parsley, chopped
Heat olive oil in a skillet over medium heat.
Add chopped onion and cook until softened, about 5 minutes.
Add minced garlic and cook for another minute.
Stir in diced tomatoes, dried oregano, and red pepper flakes. Simmer for 10 minutes.
Add shrimp to the skillet and cook until pink, about 3-4 minutes.
Sprinkle crumbled feta cheese over the top and cook until the cheese starts to melt, about 2 minutes.
Garnish with chopped parsley and serve hot.
