Shrimp Saganaki (Greek Shrimp with Tomato & Feta)

Main Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes 14.5 oz can
- 1 teaspoon dried oregano
- ½ teaspoon red pepper flakes
- ½ cup feta cheese, crumbled
- 2 tablespoon fresh parsley, chopped
- Heat olive oil in a skillet over medium heat. 
- Add chopped onion and cook until softened, about 5 minutes. 
- Add minced garlic and cook for another minute. 
- Stir in diced tomatoes, dried oregano, and red pepper flakes. Simmer for 10 minutes. 
- Add shrimp to the skillet and cook until pink, about 3-4 minutes. 
- Sprinkle crumbled feta cheese over the top and cook until the cheese starts to melt, about 2 minutes. 
- Garnish with chopped parsley and serve hot.
