Shrimp Salad (Mediterranean Style)

Main Ingredients
- 1 lb Shrimp, peeled and deveined
- 1 cup Cherry tomatoes, halved
- 1 cup Cucumber, diced
- ¼ cup Red onion, thinly sliced
- ¼ cup Kalamata olives, pitted and halved
- ¼ cup Feta cheese, crumbled
Dressing
- ¼ cup Olive oil
- 2 tablespoon Lemon juice
- 1 teaspoon Dried oregano
- 1 clove Garlic, minced
- to taste Salt and pepper
1. Cook the shrimp in boiling water for 2-3 minutes until pink and opaque. Drain and set aside to cool.
2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, olives, and feta cheese.
3. In a small bowl, whisk together the olive oil, lemon juice, oregano, garlic, salt, and pepper.
4. Add the cooled shrimp to the vegetable mixture and pour the dressing over the top. Toss gently to combine.
5. Serve immediately or refrigerate for up to 2 hours before serving.
